The wine has a lovely soft strawberry and spice characteristic. On the palate it is delicate, and dry with strawberry flavours and a fine texture, following a lovely finish with balanced acid. Vineyard Grey/brown clay loam, typically low in pH, phosphorus and potassium. Topsoil is 20-30cm deep, over acidic clay subsoil. Vineyard aspect ranges from north through to north east. Winemaking The wine is made from Estate grown Pinot Noir, which had a combination of winemaking methods. A portion is gently whole bunch pressed, another portion is soaked on skins for 12 hours, while a third portion is pressed then barrel fermented. This combination helps build complexity on the palate, while retaining finesse. After settling the juice is inoculated with yeast for a long, cool ferment to preserve freshness of flavour and aroma. |
